Save A Life! Donate Blood!

It all started when I was a senior in high school...way back in 1994!  Gosh, I am getting OLD!  We had a blood drive at our school and I decided to donate.  I have donated blood ever since and am certain that is a wonderful way to give back to your community.  I actually donated blood today!  Often times people say that they don't have money or items to donate.  Donating blood will cost your nothing but your time. 

When my children were born, they were 5 weeks premature.  My son was okay and came home with my husband and I, but my daughter required a 3 week stay in the NICU.  The night she was born, I had to sign an authorization form for a blood transfusion.  I was a wreck!  I am so grateful for those who had donated blood to save my daughter. 

Donating blood is a simple procedure that can make all the difference for someone else.  Check with your local blood bank for blood drives in your area.

Raspberry Almond Streusel Muffins

I have been soooo good!  I am totally NOT kidding!  I stumbled upon a yummy recipe that I found on the blog Food For Thought and just had to make it.  (I did not eat!!!) Not only did I want to torture myself because this recipe doesn't qualify as "diet" food, but I wanted to do an experiment to see if my hubby's butt would jiggle for a week after eating these! 

I originally was going to make the muffins with cherry filling, like the original recipe calls for, but could only find raspberry.  My husband says they are the best muffins I have ever made.  Tell me what your family thinks!

Raspberry Almond Streusel Muffins

1 3/4 cups flour
1/2 cup sugar
1/2 t. each baking powder and baking soda
1/4 t. salt
1/2 cup cold, firm butter (no substitutes!)
1 egg
3/4 cup sour cream
1 t. almond extract

Muffin filling:
4 ounces cream cheese, softened
1 egg yolk
2 T. sugar
1/2 t. vanilla extract
2/3 cup raspberry preserves (or other fruit preserves of your choice)

Streusel topping:
1/3 cup flour
2 T. sugar
2 T. cold, firm butter
1/3 cup sliced almonds
1/2 t. cinnamon

Preheat the oven to 350 degrees. Spray a 12 cup regular sized muffin pan with cooking spray and set aside.

In a small bowl, combine the cream cheese, egg, sugar and vanilla, and beat until smooth and creamy. Set aside. In a small food processor, combine all of the streusel ingredients and pulse a few times until combined and roughly chopped. Set aside.

In a medium bowl, combine the dry muffin ingredients. Cut in the butter using a pastry blender until the mixture looks like coarse crumbs. In a separate bowl, whisk together the egg, sour cream and almond extract until smooth, then add to the flour mixture, stirring until the mixture is just moistened.

Divide the batter in half and place equal amounts of the first half in each muffin cup, leaving a slight depression in the middle. Divide the cream cheese filling equally between the cups, and top off with a dab of jam. Divide the remaining batter between the muffin cups and spread it as close to the edges as you can to cover the filling. Sprinkle a generous amount of streusel topping over each muffin. Bake 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool muffins for 5 minutes, then remove from pan and serve immediately.

Cook Yourself Thin.....Have you seen it?

There was this awesome show on Lifetime called 'Cook Yourself Thin.'  Each episode showcased someone who made terrible choices in food and how they could prepare great meals for about 1/2 the calories.  I haven't seen it on t.v. for a while, but did hit the library to check out the book.  The book, as well as their website, lists tons of wonderful recipes for healthier alternatives.  I have tried a couple of the recipes and have to say that the 'French Onion Soup' is fantastic! One serving is 302 calories, which includes a thin baguette slice and cheese...I leave that fun stuff off to lower the calories even more.  What to try next?  I am thinking the 'Steak With Cauliflower "Mashed" Potatoes.'  Man, I am hungry!  Time to go work out before I pig out!

Zondervan Busy Mom's Bible (NIV) Review

I recently received a copy of the Busy Mom's Bible by  Zondervan in the mail and I just have to say the I LOVE IT!  Not only is the outside cover adorable in two tone pinks (you can order it in various colors), but there are 52 pages of daily inspirational thoughts for busy moms to focus on.  For those moms who have very little time, there are one minute devotionals, which include a verse to reflect on.  If you have five minutes to get away from your daily hustle and bustle, you can focus on the reflect and pray section which goes a bit deeper into the word.  If you are one of those lucky moms whose kids still take a nap, (Oh how I miss those days!) check out the ten minute study where you can focus and pray on multiple verses.

I know in my heart that I need to spend more time in God's Word.  I do not read the Bible like I should and I really have no excuse.  I am hoping that with this new resource, I will focus more time on building my relationship with the Lord.

Who knew marshmallows could be so sticky?

What a wonderful day Sunday was!  We didn't do anything exciting and often those are the best days.  The kids got along, we all took naps and we enjoyed spending the day as a family.  We decided to bust out the graham crackers, marshmallows and chocolate bars and venture out into the backyard to have a good old Jenkins family smore making extravaganza!  The kids loved it!  They each got to do their own and I am happy to report that nobody caught on fire. 

My beautiful daughter was covered in marshmallow. Hands, hair, face and clothes....all a sticky, fluffy, marshmallow mess! We quickly ditched the back yard and stripped the kids down for bath time. Faith decided to go potty before jumping in the tub and was yelling like crazy for daddy and mommy to help her. Taylor and I went running in the restroom to find Faith holding up her hands with pieces of toilet paper stuck to her extremely sticky fingers. It was hilarious! Wish I had a picture to post!

The little things in life are what bring the most joy. Hope you all had a wonderful weekend.

Slowly....But Surely!

I started my "get healthy" journey roughly 3 weeks ago and have lost 9 pounds so far!  With the exception of a few naughty moments, I have been very diligent about exercise and healthy food choices.  One area that I am failing is my water consumption.  I drink no where near the amount of water one should drink in a day.  Starting today, I am going to keep a log of each glass of water I drink.  I know that water is essential and will help me on my weight loss journey.  What do you struggle with?

Happy Anniversary Taylor!

This time ten years ago, I was getting ready to walk down the aisle to my best friend!  Today and always, I will love you!  I pray that with each passing year, our marriage grows stronger.  God brought us together and I am so grateful that He did!  Thank you for loving me!  I LOVE YOU!

Well, I decided to weigh myself today and was expecting to see no change at all.  BUT.....I lost another 1.5 lbs!  I was completely shocked!  I have been eating right and exercising but it is so easy to get discouraged.  I have totally been craving a yummy glass of vino but want to earn it.  4.5 lbs to go and I will hit the bottle...(kidding....only one glass at 120 calories!)  I hope to reach my goal weight by summer.  I have to say that when I started this journey 14 days ago, I was determined.  I have stated in the past that I wanted to get fit and get my pre-baby body back, but I never really stuck with it.  I am so proud of what I have accomplished so far and know that anyone who sets their mind to something can achieve it.  Don't give up!
